Key Lime Pie

Key Lime Pie
One of Carolyn's favorite pies is Key Lime.  I have never made one before but I picked up a bottle of Key Lime Juice in anticipation of making fish tacos later in the week.

The store didn't have any of those little plastic lime juice containers (I only needed a little bit) so when I picked up this big(ger) bottle I didn't think we'd use it up before I'd have to toss it out.  It did not occur to me that I could make a pie until I saw the recipe on the back.


I thought I could definitely make a Key Lime Pie, so I got the rest of the ingredients and went at it when I returned home.  The results were delicious.

Key Lime Pie
Ingredients:
9" Graham Cracker Crust Pie Shell
14oz can Sweetened Condensed Milk
3 Egg Yolks
1/2 Cup Key Lime Juice

Preheat oven to 350*, blend last three ingredients well and place into pie crust.  Bake for 15 minutes, cool outside oven for 10 minutes, then store in refrigerator to cool until ready to eat.  Garnish with whipped cream and lime slices.

To be truly appreciated, you need to take your pie to the Florida Keys to eat it. :-)

If I'm going tot he Keys...I'm travelling light. I can get some pie there.
